Mt. Vikos Feta is a traditionally made Greek sheep’s milk cheese. The milk is gathered from sheep and goats during the months when the pastures give the greenest and sweetest grass. The animals are not given any antibiotics and the cheeomplex flavor profile. Feta cheese is a Mediterranean classic and has an easily recognizable salty and earthly flavor. Its dry texture is easily crumbled and works well in salads, especially if the salad contains other Mediterranean ingre dients. Feta isn’t thought of as one of the best melting cheeses, but it will soften a great deal and become almost runny when cooked into an omelet or incorporated into a hot pasta dish.
